Local Chef Cooks Up A Culinary Storm At Prestigious James Beard House

Chef Rahm Fama at La Posada de Santa Fe Resort & Spa, a RockResort brings the flavors of the Southwest to New York

Santa Fe, NM – February 7, 2006 – Rahm Fama, Executive Chef at La Posada de Santa Fe Resort & Spa, a RockResort along with four other RockResorts chefs delighted guests on January 10, 2006 at the prestigious James Beard House in New York City.

Guests at the Beard House experienced the best of the west in an incredible meal prepared by the renowned chefs who provide spectacular dining at their respective resorts, from the Lodge & Spa at Cordillera in Edwards, CO and Snake River Lodge & Spa in Jackson Hole, WY to The Lodge at Vail in Vail, CO and The Lodge at Rancho Mirage in Palm Springs, CA.

The evening started with appetizers such as Beet Marinated Wild King Gravlax with Mustard Blini, Lobster and Pancetta Salad and Peppered Venison Tenderloin with Celery Root Remoulade and Huckleberry Glaze. 

The five-course main event featured Chef Fama’s Oven Seared Breast of Squab, and Gala Apple “Pie ala mode” with Foie Gras Nage, which proved to be a hit with diners. A Blackstone Santa Lucia Highlands Reserve Pinot Noir supplied by Constellation Wines US accompanied this flavorful course.

“It is a great honor for a chef to be invited to the James Beard House and I am delighted that I was able to bring a small taste of the La Posada de Santa Fe Resort dining experience to the discerning guests at the Beard House,” said Chef Fama.

A native of Santa Fe, Chef Rahm Fama’s entry into the culinary field began at age 14 in local fine dining establishments, and his career has since led him around the country. He spent time as consulting chef for Guy and Serge Raoul of New York’s legendary Raoul’s restaurant, which led to his installation as opening executive chef at the brothers’ venture at the Sierra Grande Lodge in New Mexico.  He went on to posts at Stratta’s, Colorado’s Broadmoor Hotel, and the Mary Elaine’s at the Phoenician Resort in Scottsdale, Arizona.  Chef Fama has transformed La Posada de Santa Fe Resort’s Fuego restaurant into a leading fine dining venue in Santa Fe.  Under his leadership, Fuego was recently awarded the AAA Four Diamond honor, one of only three restaurants in the city with this ranking.  The 157-room La Posada de Santa Fe Resort & Spa, a pueblo-style village resort, is set on six beautifully landscaped acres in the heart of Santa Fe, New Mexico.
